I grew up in northern Illinois as well and didn’t even know what brisket was until I moved to Texas lol. Not a big meat eater but brisket is delicious!

Cheese eggs, bacon or sausage links and toast if I'm cooking. Country ham, over easy eggs, cheese grits and cat head biscuits or English muffins if I'm eating out.
